Ingredients for 6 servings:
1. 12 large eggs
2. 1/4 cup water
3. 3/4 teaspoon dried oregano
4. 1/8 teaspoon pepper
5. 2 tablespoons butter
6. 6 ounces feta cheese, cut up
7. 1 medium tomatoes, diced
8. 1/4 parsley, chopped
9. 10 kalamata olives, pitted and chopped
Directions:
1. Cut feta cheese into 1/2 inch chunks.
2. Beat eggs with water, oregano and pepper to blend.
3. Melt butter in a wide skillet with an ovenproof handle, over low heat.
4. Pour in egg mixture. Cook, lifting cooked portion with a wide spatula to let the uncooked eggs flow underneath, until eggs are just softly set.
5. Sprinkle feta cheese evenly over eggs.
6. Put under broiler for about 2 minutes, just until cheese is hot.
7. Sprinkle with tomatoes, parsley & olives.
8. Cut into wedges to serve.
