Ingredients for 4 servings:
1. 2 tablespoons butter
2. 8 ounces green beans, trimmed
3. 1 garlic clove, crushed
4. 2 cups vegetable stock
5. 1/2 cup parmesan cheese, grated
6. 1/4 cup light cream
7. salt
8. black pepper, freshly ground
9. 2 tablespoons parsley, chopped to garnish
Directions:
1. Melt butter in a medium saucepan and add the green beans and garlic cooking for 2-3 minutes over medium heat,stirring frequently.
2. Stir in the stock and season with salt and pepper;bring to a boil.
3. Lower heat and simmer,uncovered,for 10-15 minutes until beans are tender.
4. Pour soup into a food processor and process until smooth.
5. Return to pan and reheat slowly.
6. Stir in Parmesan cheese and cream and sprinkle with parsley.
