Ingredients for 2 servings:
1. 2 boneless skinless chicken breast halves
2. 1 1/2-2 cups marsala wine
3. 2 cloves garlic, chopped
4. 1/2 teaspoon dried thyme
5. salt & pepper
6. 1 tablespoon olive oil
7. 1 tablespoon red wine vinegar
8. 3 tablespoons fresh grated parmesan cheese
9. 1/2 head romaine lettuce
10. 1/4 large red onion, sliced thin
11. 1/4 cup black olives, sliced
Directions:
1. Place chicken in a bowl with a lid, add marsala to cover.
2. Add garlic, thyme, salt& pepper.
3. Marinate in fridge overnight.
4. Grill chicken (indoor or outdoor grill), basting often with marinade.
5. Dressing: mix olive oil, vinegar, and parmesan.
6. Toss shredded lettuce, red onion, and olives.
7. Drizzle with dressing and top with slices of grilled chicken.
