Ingredients for 2 servings:
1. 6 cups broccoli rabe, rinsed and large stems removed (about 2 bunches)
2. 1/2 ounce pine nuts, about 2 tbsp, toasted
3. 2 garlic cloves, minced
4. 2 teaspoons olive oil
5. 1/8 teaspoon black pepper, to taste
6. 1/8 teaspoon table salt, to taste
Directions:
1. In large stockpot, boil water.
2. Add broccoli rabe and blanch 2 minutes.
3. Drain.
4. In large skillet, heat oil.
5. Add garlic and cook 1 minute.
6. Add broccoli rabe and cook 4 minutes.
7. Season with salt and pepper.
8. Add pine nuts.
9. Toss and serve.
10. Yields about 1/2 cup per serving.
