Ingredients for 8 servings:
1. 1 cup cornmeal (yellow or blue)
2. 1 cup milk, sweet
3. 1/2 teaspoon baking soda
4. 1/2 teaspoon salt
5. 2 jalapeno peppers, finely chopped
6. 1 (14 ounce) can creamed corn
7. 2 eggs, well beaten
8. 1 cup green onion, finely chopped
9. 1/2 lb cheddar cheese, grated
10. 1/4 cup olive oil
Directions:
1. Mix all of the ingredients together, except the oil, and reserve half of the cheese for toping.
2. Put the oil in a skillet and heat over medium heat until hot.
3. Pour over cornmeal mixture in bowl.
4. Stir fast to melt cheese.
5. Pour mixture into hot skillet and top with remaining cheese.
6. Bake at 350°F for 40 minutes.
