Ingredients for 6 servings:
1. 1 (16 ounce) can chickpeas
2. 1 lemon, juice and zest of
3. 1 tablespoon red wine vinegar
4. 1/4 cup olive oil
5. 6 kalamata olives, pitted
6. 1 plum tomato, coarsely chopped
7. 3 medium garlic cloves
8. 2 pinches hot red pepper flakes
9. 2 tablespoons chopped feta
10. 1 tablespoon parsley
11. salt and pepper
Directions:
1. Drain and rinse the chickpeas well.
2. Puree all ingredients in a food processor.
3. Let the flavors blend over night in the fridge and serve at room temperature.
