Ingredients for 4 servings:
1. 3 -4 lbs lean roast (rolled works well)
2. 1 (16 ounce) jar pepperoncini peppers
3. 1 tablespoon minced garlic
4. 1 tablespoon oregano
5. 1 tablespoon basil
6. 1 tablespoon Italian spices
Directions:
1. Place beef roast in the crock pot.
2. Mix together the dried herbs in a bowl and sprinkle over the roast.
3. Sprinkle the minced garlic over the roast.
4. Pour the jar of pepperocini peppers (including the juice) over the roast.
5. Cover and cook on high 6-8 hours.
6. Shred with fork and serve on French rolls or with vegetables.
