Ingredients for 6 servings:
1. 1 cup sliced celery
2. 1 large onion, chopped
3. 1 (14 1/2 ounce) can tomatoes, cut up
4. 1 (14 ounce) can low sodium chicken broth
5. 1/3 cup tomato paste
6. 1 tablespoon Worcestershire sauce
7. 1 1/2-4 teaspoons cajun seasoning, to taste
8. 1 lb boneless skinless chicken breast halves or 1 lb chicken thigh, cut into 3/4 inch pieces
9. 1 1/2 cups instant rice
10. 3/4 lb peeled and deveined cooked shrimp
11. 3/4 cup chopped green bell pepper
Directions:
1. Add the first 7 ingredients to a 4-quart slow cooker; stir to combine.
2. Add in the chicken; stir.
3. Cover and cook on LOW for 5-6 hours.
4. Add in rice, shrimp, and green pepper.
5. Cover and let stand 10-15 minutes or until most of the liquid is absorbed and rice is tender.
6. Adjust seasoning to taste.
