Ingredients for 2 servings:
1. 300 g soy sauce marinated chicken
2. 1 piece red bell pepper
3. 2 teaspoons fish sauce
4. 1 tablespoon dashi stock
5. 2 cups cooked rice (good for two)
6. 1 teaspoon ginger, sliced thinly
7. 2 tablespoons tomato ketchup
8. 1 teaspoon cornstarch
9. 1 teaspoon sugar
10. 1 teaspoon vinegar
11. 1 piece dried red chili pepper, crushed
Directions:
1. Take out the soy sauce marinated chicken from the fridge then leave at room temperature for 20 minutes before starting to cook.
2. Remove the heads and seeds of the red bell pepper then slice into bite-sized wedges.
3. Microwave the chicken (covered) for 3 minutes using 600W.
4. Combine the fish sauce, dashi stock, rice and ginger in a bowl. Mix well then cook in a microwave (covered) for 2 minutes using 600W.
5. Prepare the sweet chili sauce by mixing 1 tsp cornstarch, tomato ketchup, sugar, vinegar and dried chili pepper. Microwave for about 30 seconds using 600W or until it thickens a bit.
6. Put the rice on a serving plate. Slice the chicken into bite-sized pieces then put on top of rice. Serve with the sliced red bell pepper on the side then pour over the sweet chili sauce.
