Ingredients for 4 servings:
1. 2 tablespoons butter
2. 1 teaspoon curry powder
3. 2/3 cup heavy whipping cream
4. 2/3 cup reduced-sodium chicken broth
5. 8 kumquats, seeded, minced
6. 2 tablespoons golden raisins
7. 3/4 lb shelled deveined uncooked large shrimp
8. 2 tablespoons minced fresh cilantro
Directions:
1. Melt butter in a large skillet over high heat until it foams.
2. Stir in curry powder; reduce heat to medium.
3. Cook, stirring constantly, 1 minute or until lightly darkened.
4. Add cream, chicken broth, kumquats and raisins; increase heat to high.
5. Cook, stirring occasionally, 2 to 3 minutes or until slightly thickened.
6. Reduce heat to medium; add shrimp.
7. Cook 3 minutes or until shrimp turn pink.
8. Stir in cilantro.
