Ingredients for 8 servings:
1. 3 tablespoons olive oil
2. 1 large onion, chopped
3. 1 green bell pepper, chopped
4. 3 cloves garlic, minced
5. 8 cups water
6. 3 (8 ounce) cans tomato sauce
7. 1 1/2 cups lentils
8. 1 cup brown rice
9. 1 cup dry white wine
10. 3 carrots, sliced
11. 3 stalks celery, sliced
12. 2 large red potatoes, diced
13. 2 zucchini, sliced
14. 1 teaspoon dried thyme, crumbled
15. 1 teaspoon dried basil, crumbled
Directions:
1. Heat oil in heavy large saucepan over medium-high heat.
2. Add onion, bell pepper and garlic, saute until tender, about 5 minutes.
3. Add remaining ingredients.
4. Cover and simmer until lentils and rice are tender and soup is thick, about 1 hour 15 minutes.
5. Season with salt and pepper, to taste.
