Ingredients for 6 servings:
1. 1 1/2 cups mangoes, chopped
2. 1 cup green onion, thinly sliced
3. 1/2 cup cooked brown rice (I used Lundberg Wild Blend rice)
4. 3 tablespoons cilantro, finely chopped
5. 2 tablespoons salsa (fresh or bottled)
6. 2 tablespoons lime juice
7. 2 tablespoons olive oil
8. 3/4 teaspoon salt
9. 1/4 teaspoon fresh ground black pepper
10. 1 (15 ounce) can black beans, rinsed and drained
Directions:
1. Combine all ingredients in a large bowl. Toss gently to mix.
