Ingredients for 6 servings:
1. 1 (19 ounce) can romano beans, drained and rinsed
2. 1/2 cup chopped cucumber
3. 1 stalk celery, chopped
4. 1 ripe mango, chopped
5. 1/2 yellow bell pepper, chopped
6. 1 tablespoon finely chopped onion
7. 1 garlic clove, minced
8. 1 teaspoon cumin
9. 1 lime, juice of
10. 1 tablespoon olive oil
11. salt and pepper
12. 1 teaspoon sugar
Directions:
1. Combine all ingredients, toss and serve! Super simple.
2. For a bit more tang, add a splash of white wine vinegar.
