Ingredients for 2 servings:
1. 1 lb feta cheese, cut into cubes
2. 1 cup fresh black Greek olive, pitted
3. 2 roasted red peppers
4. 1/2 cup olive oil
5. 1 small red onion, diced
6. 2 teaspoons minced garlic
7. 1 tablespoon balsamic vinegar
8. 2 teaspoons fresh thyme
9. salt & freshly ground black pepper
10. lemon juice
Directions:
1. Combine the peppers, feta and olives in a large bowl.
2. Add the olive oil and toss gently.
3. Add the remaining ingredients and toss gently again.
4. Adjust seasonings, cover and chill at least 5 hours before serving.
5. Serve this with toasted pita bread as an appetizer.
