1. 4 tablespoons butter
2. 1 cup onion, finely chopped
3. 2 medium tomatoes, chopped
4. 2 cups frozen corn, thawed
5. 2 (14 ounce) cans creamed corn
6. 1 (12 ounce) can fat-free evaporated milk
7. 3 cups chicken broth
8. 1/2-1 teaspoon salt
9. 1 teaspoon black pepper
Directions:
1. In a large saucepan, melt the butter over moderate heat.
2. Add the onions and sauté for 5 minutes.
3. Stir in the tomatoes and cook for about 5 more minutes.
