Ingredients for 4 servings:
1. 1 -1 1/2 lb ground beef
2. 1 (14 1/2 ounce) can Mexican-style tomatoes
3. 1 (14 ounce) can Spanish rice
4. 1 (16 ounce) can refried beans (I like black beans)
5. 1/2 cup finely chopped onion
6. 1/2 teaspoon ground cumin
7. 1 tablespoon minced garlic
8. 1 (13 ounce) bag tortilla chips
9. 1 1/2 cups grated cheddar cheese
10. 1/2 cup sliced black olives
11. salt and pepper
12. sour cream
Directions:
1. Preheat oven to 350°F.
2. Brown ground beef and onion, drain fat.
3. Add rice, tomatoes, cumin, garlic, salt and pepper.
4. Cook 10 minutes.
5. Lightly crush enough tortilla chips to cover bottom of lightly greased casserole dish.
6. Spread refried beans over crushed chips.
7. Layer meat mixture over beans.
8. Top with black olives and cheese.
9. Bake for 20 minutes or until thoroughly heated and cheese is melted.
10. Serve with remaining chips for dipping.
11. Serve with sour cream on the side, if desired.
