Ingredients for 48 servings:
1. 1 1/2 cups all-purpose flour
2. 4 teaspoons cocoa powder
3. 1/2 teaspoon baking soda
4. 1/4 teaspoon salt
5. 1/2 cup butter, softened (can use margarine)
6. 1/2 cup brown sugar, packed
7. 1/4 cup granulated sugar
8. 1 large egg
9. 1 teaspoon vanilla extract
10. 5 tablespoons instant coffee
11. 2 tablespoons warm water
12. 1 cup semisweet chocolate morsel
Directions:
1. Preheat oven to 350°.
2. Combine flour, cocoa, baking soda and salt in a small bowl. Beat butter, brown sugar and granulated sugar in a large mixing bowl until light and creamy. Beat in egg and vanilla extract.
3. Combine coffee crytals and water in small bowl, stir until coffee is dissolved. Add to sugar mixture; mix well. Gradually mix in flour mixture. Stir in morsels.Drop by rounded teaspoon onto prepared baking sheets.
4. Bake for 10 to 12 minutes, or until edges are crisp. Remove to wire racks to cool completly.
