Ingredients for 4 servings:
1. 2 cups clam juice
2. 3/4 cup dry white wine
3. 1/2 cup chopped carrot
4. 1/2 cup chopped celery
5. 1/2 cup chopped tomato
6. 4 green onions, sliced
7. 1 large garlic clove, minced
8. 1 bay leaf
9. 10 saffron threads, crumbled
10. 2 lbs mussels, scrubbed
11. salt and cayenne
Directions:
1. Combine all ingredients, except mussels, salt and cayenne, in slow cooker; cover and cook on high 4 hours, adding mussels during last 15 minutes.
2. Discard bay leaf and any mussels that have not opened; season to taste with salt and pepper.
