Ingredients for 12 servings:
1. 1 cup flour
2. 1 teaspoon cinnamon
3. 1/4 teaspoon salt
4. 1 teaspoon baking powder
5. 1 cup oats, quick cooking
6. 1/2 teaspoon baking soda
7. 1 cup buttermilk
8. 1 egg
9. 1/4 cup brown sugar
10. 1/4 cup white sugar
11. 1/2 cup vegetable oil
12. 3/4 cup raisins
Directions:
1. Using food processor steel blade: Process flour, cinnamon, salt, baking powder and baking soda until blended, about 5 seconds. Transfer to a large mixing bowl.
2. Place rolled oats and buttermilk in processor and let stand for 2 to 3 minutes.
3. Add egg, sugars and oil; process for 10 seconds. Add to flour mixture along with raisins. Stir with a wooden spoon just enough to moisten.
4. Spoon into paper-lined muffin tins. Bake in preheated 400 degree oven for 18 to 20 minutes, until golden.
