Ingredients for 2 servings:
1. 3 limes, juice of, squeezed
2. 1 cup rice flour
3. 1 teaspoon baking powder
4. 1 pinch salt
5. 2 egg whites
6. 3/4 cup water
7. pepper (don’t be afraid to add a little kick)
Directions:
1. This one is a beauty. Lime seems to go with almost everything. Putting them into fish batter just makes sense. This is a quick and easy batter to put together. If you are a lime fan give it a whirl! It makes enough for about 2 pounds of fillets.
2. Mix the ingredients well in a bowl ensuring all the lumps have been removed. Pat fish dry before dipping in the batter. Fry until golden brown.
