Ingredients for 4 servings:
1. 3 medium potatoes, peeled and cut in chunks
2. 2 cups water
3. 1/4 teaspoon salt
4. 1/4 cup finely diced onion
5. 3 tablespoons butter
6. 3 tablespoons all-purpose flour
7. ground black pepper, to taste
8. 3 cups milk
9. 1 cup shredded cheddar cheese
10. 1 cup cubed cooked ham
Directions:
1. Bring water and salt to boil; add potatoes and cook until tender. Reserve 1 cup of cooking liquid (add water to measure 1 cup if necessary) and drain potatoes. Melt butter in med. saucepan over med. heat, add onion and saute until tender. Add flour to butter and onion mixture; stir until smooth. Season with a little pepper; continue to cook and stire for 1 minute. Gradually add potatoes, reserved cooking liquid and milk. Stir well; add ham and heat through. Add cheese, simmer over low heat stirring frequently for about 20 minutes.
