Ingredients for 4 servings:
1. 1 (15 ounce) can pumpkin
2. 1 (14 ounce) can light coconut milk
3. 1 (15 ounce) can navy beans
4. 1 (14 ounce) can chicken broth
5. 1 teaspoon basil
6. 1/4 teaspoon cayenne
7. 1 teaspoon garlic, minced
8. 1 tablespoon brown sugar
9. 1/2 teaspoon salt
10. 4 tablespoons light sour cream
11. 4 green onions, sliced
Directions:
1. drain and rinse beans.
2. mix all ingredients except green onions, and light sour cream.
3. bring to a boil and simmer 5 minutes.
4. blend soup with imersion blender or in small batches in blender.
5. divide into 4 servings, top each with light sour cream, and green onions.
