Ingredients for 1 servings:
1. 2 cups sugar
2. 3 tablespoons pumpkin puree
3. 1/4 teaspoon cornstarch
4. 1/3 teaspoon pumpkin pie spice
5. 1/2 cup cream (or evaporated milk)
6. 1/2 teaspoon vanilla
Directions:
1. Combine first 5 ingredients in a saucepan and heat until it reaches soft ball stage when dropped in cold water Add vanilla and beat until smooth.
2. Pour into a buttered 8 x 8 pan.
3. Cut when cool.
