Ingredients for 4 servings:
1. 1 large onion, diced
2. 1 tablespoon olive oil
3. 4 cups water
4. 12 ounces roasted red peppers
5. 1/2 teaspoon dried basil
6. 1/4 teaspoon ground thyme
7. 1/4 teaspoon pepper
8. 1 teaspoon salt
9. 1/2 cup coconut milk
Directions:
1. In a medium pot, heat oil and saute onion 2-3 minutes.
2. Add water, red peppers, and spices. Bring to a boil.
3. Reduce heat and simmer for 20 minutes.
4. Remove from heat and add coconut milk. Use an immersion blender to puree until smooth.
5. Optional: Garnish with fresh basil and a drizzle of olive oil.
