Ingredients for 6 servings:
1. 4 tablespoons butter
2. 2 tablespoons scallions, chopped
3. 1 jalapeno chile, finely chopped
4. 1 tablespoon garlic, minced
5. 1 tablespoon thyme, chopped
6. 1/2 cup chicken broth
7. 3 lbs large shrimp, peeled and deveined
Directions:
1. Melt butter in skillet. Add scallions, garlic, chili and thyme.
2. Saute 2 minutes.
3. Add broth and bring to a boil.
4. Cool slightly, whirl in a blender and return to skillet.
5. Adjust seasonings.
6. Add shrimp and simmer about 5 minutes, turning once.
