Ingredients for 4 servings:
1. 1 lb okra, lightly breaded
2. breadcrumbs
3. 8 ounces frozen whole kernel corn (Fresh corn is certainly an option in this recipe)
4. 8 ounces summer squash
5. 8 ounces diced or chunked chicken (pre-cooked)
6. 4 ounces green peppers
7. 4 ounces onions
8. 1 teaspoon garlic powder
9. 1 teaspoon pepper
10. 1 teaspoon salt
11. butter-flavored vegetable oil, as needed
Directions:
1. Saute onions and peppers with butter flavored vegetable oil. Remove from the skillet.
2. Saute chicken in the same skillet with oil. Remove after heating thoroughly.
3. Saute corn and squash in the same skillet with oil. Remove.
4. Fry okra in skillet until golden brown.
5. Add salt, pepper, and garlic powder.
6. When okra is done, begin adding all the ingredients back into the skillet until reheated to desired temperature.
