Ingredients for 12 servings:
1. 7 ounces smoked salmon
2. 7 ounces smoked trout
3. 7 ounces smoked mackerel (or salt cod)
4. 6 cherry tomatoes, halved
5. 12 mixed green and red grapes, halved and deseeded
6. 2 kiwi fruits, peeled and cut into 3/4-inch pieces
7. 9 ounces assorted berries (strawberries, raspberries, etc)
8. 6 green olives, pitted and halved
9. fresh ground black pepper
10. 1 lemon, quartered
11. 12 skewers
Directions:
1. Cut the fish into 1-inch pieces.
2. Alternate pieces of the three fish, folding where necessary, with the cherry tomatoes, fruit and olives.
3. Season lightly with pepper and squeeze over the juice from the lemon wedges.
