Ingredients for 6 servings:
1. 1 medium onion, chopped
2. 1 medium bell pepper, chopped
3. 1 cup celery, chopped
4. 1 medium head of cabbage, shredded
5. 1 (10 1/2 ounce) can Ro-Tel tomatoes
6. 1 jalapeno pepper, seeded and chopped
Directions:
1. Saute onion, celery and bell pepper in shillet.
2. Add tomatoes and bring to a simmer.
3. Add cabbage and cook until just tender.
4. Alternately you can steam the cabbage and pour tomato mix over it.
5. Add jalapeno is you like it hot.
