Ingredients for 4 servings:
1. 1 onion, sliced
2. 1 red bell pepper, deseeded and sliced
3. 1 green bell pepper, deseeded and sliced
4. 2 ounces chorizo sausage, sliced
5. 2 garlic cloves, crushed
6. 1 tablespoon olive oil
7. 9 ounces basmati rice
8. 400 g chopped tomatoes
9. 2 cups boiling water
10. 8 ounces prawns, peeled and defrosted (if frozen)
Directions:
1. In a non-stick frying pan, fry the onion, peppers, chorizo and garlic in the oil over high heat for 3 minutes.
2. Stir in the rice, tomatoes and boiling water.
3. Cover and cook over high heat for 12 minutes.
4. Uncover and stir – the rice should almost be tender at this point.
5. Stir in the prawns, with a bit more water if the rice looks dry.
6. Cook for another minute until the prawns are just pink and the rice tender.
