Ingredients for 8 servings:
1. 1 lb carrot
2. 3 tablespoons olive oil
3. 2 garlic cloves
4. 1 pinch cayenne pepper
5. 1 pinch cumin
6. 1 pinch paprika
7. 1 tablespoon lemon juice
8. salt, to taste
9. pepper, to taste
10. 1/4 cup chopped fresh parsley
Directions:
1. Peel and quarter carrots and place in saucepan with just enough water to cover them.
2. Bring to a boil and cook 2-3 minutes.
3. Drain, return to the pan and add oil, garlic, cayenne, cumin and paprika.
4. Cook until carrots are tender.
5. Add lemon juice, salt and pepper.
6. Chill and then garnish with parsley.
7. Serve cold.
