Ingredients for 2 servings:
1. 1 cup frozen corn
2. 1 poblano pepper
3. cajun seasoning
4. butter or margarine
Directions:
1. Grill poblano or roast on gas burner. Peel off skin; remove seeds and dice.
2. Microwave corn until hot following package directions. drain.
3. Add up to 1 tbsp Cajun seasoning (careful), or to taste and same with butter or margarine.
4. Mix poblanos in and serve!
