Ingredients for 4 servings:
1. 2 tablespoons peanut oil
2. 2 garlic cloves, minced
3. 1 teaspoon ginger, minced
4. 1/4 teaspoon red pepper flakes
5. 1 red bell pepper, cut into 1 inch triangles
6. 2 ounces shiitake mushrooms
7. 10 ounces fresh spinach, washed, stemmed and coarsely chopped
8. 1 teaspoon fish sauce
Directions:
1. Heat oil in wok or large skillet over high heat. Add garlic, ginger, and red pepper flakes; stir fry 30 seconds.
2. Add bell pepper and mushrooms; stir fry 2 minutes. Add spinach and fish sauce; stir fry 2 minutes or until spinach is wilted.
