Ingredients for 6 servings:
1. 1 tablespoon canola oil
2. 1 cup chopped onion
3. 1/2 lb ground sirloin
4. 3 garlic cloves, minced (or more!)
5. 3 cups frozen mixed vegetables
6. 2 cups water
7. 14 1/2 ounces stewed tomatoes with juice
8. 1 cup sliced celery
9. 1 teaspoon beef bouillon, granulated
10. 1/2-1 teaspoon fresh ground black pepper
11. 1 (10 1/2 ounce) can beef broth
12. 1/2 cup all-purpose flour
Directions:
1. Heat oil over medium-high heat in Dutch oven.
2. Saute onions 5 minutes and add garlic and ground sirloin. Cook until beef is browned.
3. Add all ingredients except beef broth and flour.
4. Bring to a boil. In bowl, whisk together the broth and flour until smooth. Add to soup, stirring constantly, until mixture comes to a boil.
5. Reduce heat to low and cover. Simmer 45 minutes, stirring frequently.
