Ingredients for 30 servings:
1. 1 cup butter, softened
2. 1 1/4 cups confectioners’ sugar
3. 1 egg
4. 1 teaspoon vanilla extract
5. 2 cups all-purpose flour
6. 1 teaspoon baking soda
7. 1 teaspoon cream of tartar
8. 1/8 teaspoon salt
Directions:
1. In a mixing bowl, cream butter and sugar. Beat in egg and vanilla.
2. Combine the flour, baking soda, cream of tartar and salt; gradually add to the creamed mixture.
3. Shape into two 5-in. rolls; wrap in plastic wrap.
4. Refrigerate for 1 hour or until firm. Unwrap; cut into 1/4-in. slices.
5. Place 2 inches apart on ungreased baking sheets. Bake at 350 degrees F for 8-10 minutes.
6. Remove to wire racks to cool.
