Ingredients for 4 servings:
1. 1 medium onion, coarsely chopped
2. 1 medium green bell pepper, coarsely chopped
3. 3/4 cup ketchup (no salt added)
4. 1/2 lemon, grated peel and juice of
5. 1 tablespoon cornstarch
6. 3 tablespoons brown sugar
7. 1/2 cup fresh squeezed orange juice
8. 1/4 teaspoon ground ginger or 2 teaspoons fresh grated gingerroot
9. 3 oranges, peeled,cut into bite-size pieces
10. 20 medium cooked shrimp, with tails and shells removed (about 7 ounces)
11. 3 cups cooked rice (no salt added)
12. chopped cilantro or parsley
Directions:
1. In large non-stick skillet, sprayed with no-stick cooking spray, cook onion and green pepper over medium-high heat until tender but not browned.
2. Add ketchup, lemon peel and juice.
3. Blend cornstarch and sugar with orange juice and ginger; add to sauce.
4. Cook, stirring until thickened.
5. Add orange pieces and shrimp; heat.
6. Serve over hot cooked rice.
7. Sprinkle with chopped cilantro.
8. Serve with lemon wedges, if desired.
