Ingredients for 16 servings:
1. 1/2 cup sugar
2. 1 tablespoon cornstarch
3. 2 tablespoons lemon juice
4. 1 egg, beaten
5. 1 (20 ounce) can pineapple chunks
6. 1 (8 ounce) container Cool Whip
7. 3 granny smith apples, cored and chopped
8. 2 cups miniature marshmallows
9. 1 1/2 cups salted peanuts
Directions:
1. In heavy-bottomed saucepan mix sugar, cornstarch, lemon juice, egg and juice from pineapple.
2. Cook over low heat, stirring constantly, until mixture thickens, about 5 minutes.
3. Cool.
4. Stir in Cool Whip.
5. In large bowl, mix apples, pineapple chunks, marshmallows and peanuts.
6. Toss with dressing.
7. Refrigerate 2-3 hours before serving.
