Ingredients for 4 servings:
1. 1 cup roma tomato, chopped
2. 1 cup white onion, chopped
3. 1/2 cup anaheim chilies or 1/2 cup cubanelle pepper
4. 1/4 cup cilantro, chopped
5. 2 garlic cloves, minced
6. 1/4 cup tequila-lime vinegar
