Ingredients for 4 servings:
1. 2 1/2 cups stewed tomatoes
2. 1 onion, chopped
3. 1 carrot, cleaned, peeled and chopped
4. 1 cup cornmeal
5. 1 teaspoon sugar
6. salt and pepper
7. 1 cup roasted peanuts, chopped
Directions:
1. Mix tomatoes, onion, carrot, corn meal, sugar, and season to taste with salt and pepper.
2. Cook slowly until thick–about 1 hour.
3. Once this is completed, add peanuts and beat well.
4. Pack into a well oiled pan.
5. Refrigerate until cold.
6. Slice and fry up in bacon drippings.
