Ingredients for 8 servings:
1. 1/3 cup olive oil or 1/3 cup vegetable oil
2. 2 cloves garlic, finely chopped
3. 1 small onion, chopped
4. 2 red bell peppers, cut into 1/2 inch strips
5. 2 green bell peppers, cut into 1/2 inch strips
6. 2 yellow bell peppers, cut into 1/2 inch strips
7. 6 plum tomatoes, chopped
8. 1/2 teaspoon salt
9. 1/4 teaspoon pepper
Directions:
1. Heat oil in a large skillet over med- high heat.
2. Cook garlic and onion in oil, stirring often, until tender.
3. Reduce heat to med-low and add peppers.
4. Cover and cook 5 minutes.
5. Add tomatoes, salt and pepper and stir until combined.
6. Cook uncovered about 5 minutes, stirring often, until peppers are crisp tender.
7. Serve warm or cover and refrigerate at least 2 hours.
