Ingredients for 12 servings:
1. 4 ripe bananas
2. 1/2 cup brown sugar or 1/2 cup pure maple syrup
3. 1/2 cup vegetable oil
4. 1 teaspoon cinnamon
5. 1 teaspoon cardamom powder
6. 3/4 teaspoon salt
7. 1 cup whole wheat flour
8. 1 1/2 cups white flour
9. 1 teaspoon baking powder
10. 1 teaspoon baking soda
Directions:
1. Preheat oven to 350°F
2. Grease or place cups in tin for 12 muffins.
3. Mash bananas in a bowl.
4. Add oil, sugar or maple syrup, salt, cinnamon and cardamon and mix.
5. Add flours, baking powder and baking soda and mix.
6. Spoon into muffin tins and bake for 20-25 minutes until muffins are done and slightly browned on top.
