Ingredients for 2 servings:
1. 3 tablespoons olive oil
2. 1 -2 garlic clove
3. 1 medium eggplant
4. 1 medium red pepper
5. 1/4 medium onion
6. 1/4 cup mayonnaise
7. 1 bunch basil
8. 2 French rolls
9. 4 slices mozzarella cheese
Directions:
1. Roast vegetables in olive oil. (prep time would be roasting time).
2. Combine mayonnaise with chopped basil.
3. Split french roll, spread with basil-mayo, top with veggie mixture and mozzarella.
4. Toast under broiler.
