Ingredients for 4 servings:
1. 1 1/2 cups watermelon, seeded and diced
2. 1/2 cup water
3. 1 tablespoon honey
4. 1 tablespoon fresh lemon juice
5. 1 tablespoon sugar
6. 24 small mint leaves
Directions:
1. Combine watermelon, water, honey, lemon juice and sugar in a blender or food processor. Process until smooth.
2. Place mint leaves in ice trays. Pour watermelon mixture into ice trays. Freeze.
