Ingredients for 6 servings:
1. 2 cups pancake mix
2. 1 1/2 cups nonfat milk
3. 1 egg
4. 1 tablespoon canola oil
5. 1 teaspoon ground cinnamon
6. 1 cup blueberries (fresh or frozen)
7. butter
8. maple syrup
Directions:
1. In a large bowl, combine the pancake mix, milk, egg, oil and cinnamon just until blended (batter will be lumpy). Fold in blueberries.
2. Spread into a greased 15 x 10 x 1 inch baking pan. Bake at 400 degrees for 10-12 minutes or until golden brown. Serve with butter and syrup.
