Ingredients for 4 servings:
1. 1 tablespoon butter
2. 1 tablespoon olive oil
3. 1 small onion, chopped
4. 1 garlic clove, minced
5. 1/2 cup chopped green peppers or 1/2 cup chopped red pepper
6. 1/2 cup chopped celery
7. 1 teaspoon creole seasoning
8. 1/2 teaspoon dried leaf thyme
9. 1/2 teaspoon ground paprika
10. 1 teaspoon Worcestershire sauce
11. 1 dash ground black pepper
12. 1/4 teaspoon salt
13. 1 (14 1/2 ounce) can diced tomatoes with juice
14. 1 tablespoon tomato paste
15. 1/2 cup chicken broth
Directions:
1. Heat the butter and oil in a medium saucepan.
2. Add the chopped onion, garlic, chopped celery and bell pepper; sauté until tender.
3. Stir in all remaining ingredients.
4. Simmer over low heat for about 10 minutes.
5. Taste and adjust seasoning.
6. Serve with fried green tomatoes or eggplant, or use with shrimp or other seafood.
