Ingredients for 6 servings:
1. 1 tablespoon vegetable oil
2. 1 large onion, chopped
3. 1 (14 1/2 ounce) can diced tomatoes with green chilies
4. 1 (14 1/2 ounce) can chicken broth
5. 1 (10 3/4 ounce) can cream of chicken soup
6. 1 (16 ounce) package frozen mixed vegetables
7. 2 cups cooked chicken, cubed
8. 1/2 teaspoon dried oregano
9. 1/2 teaspoon salt
10. 1/2 teaspoon ground black pepper
Directions:
1. Heat oil in a 3-quart saucepan over medium-high heat.
2. Add onion; cook for 3 minutes.
3. Add tomatoes, broth, soup, vegetables, chicken and seasonings; simmer over medium heat until heated through.
