Ingredients for 4 servings:
1. 1 (15 ounce) can black beans, drained and rinsed
2. 1/2 cup vegetable broth
3. 1/3 cup diced onion
4. 1/3 cup diced green pepper
5. 1/2 teaspoon salt
6. 1/2 teaspoon cumin
7. 1/2 teaspoon chili powder
8. 1 pinch cayenne pepper
Directions:
1. Add everything to a saucepan, stir and bring to a boil. Reduce to medium-low heat and simmer for 10 minutes, stirring occasionally. Makes 4 servings – each serving enough to fill 2 taco size tortillas.
2. Note: I like to drain excess liquid prior to filling tacos. However, if some of the mixture you can leave in the liquid and freeze in a tupperware.
