Ingredients for 6 servings:
1. 1/2 cup crisco corn oil
2. 1 large onion, quartered, then halved
3. 2 medium zucchini, cut into 1/2 inch slices
4. 2 medum yellow squash, cut into 1/2 nch slices
5. 4 ounces mushrooms, halved
6. 2 teaspoons dried oregano
7. salt and pepper
8. 1/3 cup grated parmesan cheese
Directions:
1. In a large skillet with a lid, heat Crisco oil over medium high heat. Add onion. Saute 3 minutes. Add zucchini, yellow squash, mushrooms, oregano and salt and pepper; sauté 5 minutes more.
2. Cover and cook until tender, about 10 minutes. Sprinkle with Parmesan cheese; serve immediately.
