Ingredients for 1 servings:
1. 3/4 lb fresh red cherries, pitted
2. 1 cup water
3. 1/4 cup sake
4. 1 tablespoon red raspberry vinegar
5. 1 tablespoon lemon juice, freshly squeezed
6. 1 tablespoon granulated sugar
Directions:
1. Combine all ingredients in 3-qt. saucepan.
2. Boil 15 minutes to reduce liquid by half.
3. Transfer to 1-qt. stainless-steel bowl; cool in ice-water bath to about 40F.
4. Blend chilled dressing in food processor fitted with metal blade until smooth, about 30 seconds.
