Ingredients for 2 servings:
1. 1 cup garbanzo beans
2. 20 leaves spinach
3. 3 slices marinated tofu (Trader Joes teriyaki is excellent)
4. 2 teaspoons raisins
5. 2 teaspoons diced jicama
6. 1 teaspoon dried diced pineapple
7. 2 hamburger buns or 2 wraps, in 2 lavash
8. curry sauce
9. 1 teaspoon curry powder
10. 1/4 cup cashews
11. 1 1/2 teaspoons Agave or 1 1/2 teaspoons maple syrup
12. 1/4 teaspoon sea salt
13. 1/4 cup water
Directions:
1. Combine ingredients for curry sauce in a blender. Blend until smooth.
2. Puree garbanzo with 1/2 of curry sauce. Warm finished mixture then mix in raisins, jicama, and pineapple.
3. Toast buns or lavash. Liberally cover bun or lavash with curry sauce. Layer spinach, garbanzo mix, and tofu.
