Ingredients for 4 servings:
1. 2 cups carrots, cut into cubes
2. 2 cups fenugreek leaves, chopped (methi leaves)
3. 1/2 teaspoon cumin seed
4. 1 large onion, finely chopped
5. 1 -2 green chili, sliced
6. 1 large garlic clove, finely chopped
7. 1/2 inch piece gingerroot, finely chopped
8. 1/4 teaspoon turmeric powder
9. 2 teaspoons coriander powder
10. 2 teaspoons olive oil
11. salt
Directions:
1. Heat oil in a non-stick pan.
2. Add cumin seeds and allow to crackle.
3. Once it stops, add green chillies, garlic, ginger and onion.
4. Stir-fry until the raw smell of ginger and garlic is gone and the onion has browned.
5. Add methi leaves and saute for 2 minutes.
6. Fold in the carrots, turmeric and corriander powders, salt and 1 cup of water.
7. Stir this well, cover and cook on low heat till all the moisture has evaporated and the carrots are tender.
8. Serve hot with paneer kulchas.
